- 6 enriched kaiser rolls
- Butter or margarine, softened
- 1 tablespoon chopped uncooked bacon
- 2 tablespoons chopped onion
- 1 jar (2 ounces) sliced mushrooms, drained
- 1 teaspoon snipped parsley
- 18 slices (about 1 pound) Canadian-style bacon, cut 1/8 inch thick
- 6 slices (1 ounce each) Swiss cheese
- 6 thin green pepper rings
- Paprika
- Cherry tomatoes
- Pimento-stuffed olives
- Split rolls; if desired, reserve tops to accompany open-faced sandwiches. Spread roll bottoms with butter.
- Combine bacon, onion, mushrooms, and parsley in a skillet and cook about 5 minutes.
- Arrange 3 slices Canadian-style bacon on each buttered roll and top with mushroom mixture and 1 slice cheese. Place 1 green pepper ring on each cheese slice; sprinkle paprika inside ring.
- Place sandwiches on a cookie sheet and broil 6 inches from heat until cheese melts (3 to 5 minutes). Garnish each with a cherry tomato and an olive on a skewer.
