Canadian-Mushroom Sandwiches

  • 6  enriched kaiser rolls
  • Butter or margarine, softened
  • 1  tablespoon chopped uncooked bacon
  • 2  tablespoons chopped onion
  • 1  jar (2 ounces) sliced mushrooms, drained
  • 1  teaspoon snipped parsley
  • 18 slices (about 1 pound) Canadian-style bacon, cut 1/8 inch thick
  • 6  slices (1 ounce each) Swiss cheese
  • 6  thin green pepper rings
  • Paprika
  • Cherry tomatoes
  • Pimento-stuffed olives
  1. Split rolls; if desired, reserve tops to accompany open-faced sandwiches. Spread roll bottoms with butter.
  2. Combine bacon, onion, mushrooms, and parsley in a skillet and cook about 5 minutes.
  3. Arrange 3 slices Canadian-style bacon on each buttered roll and top with mushroom mixture and 1 slice cheese. Place 1 green pepper ring on each cheese slice; sprinkle paprika inside ring.
  4. Place sandwiches on a cookie sheet and broil 6 inches from heat until cheese melts (3 to 5 minutes). Garnish each with a cherry tomato and an olive on a skewer.
