Quick Applesauce Whip

  • 1  can (16 ounces) applesauce
  • 1/2 teaspoon grated lemon peel
  • 2  teaspoons lemon juice
  • 1/2 teaspoon ground cinnamon
  • 3  egg whites
  • 1/8 teaspoon salt
  • 6  tablespoons sugar
  • Ground nutmeg
  1. Combine applesauce, lemon peel, juice, and cinnamon.
  2. Beat egg whites and salt until frothy. Add sugar gradually, beat well. Continue beating until rounded peaks are formed. Fold beaten egg whites into applesauce mixture.
  3. Spoon immediately into dessert dishes. Sprinkle nutmeg over each serving.
